Day 9

222 pounds! Nice surprise!

pork tenderloin Caribbean jerk


6oz pork slices pounded
rub with Caribbean jerk spices

cook in pan sprayed with cooking spray remove when cooked keep warm
put following in same pan and stir till thickening serve over pork.

1/4 cup pineapple juice or small can crushed pineapple
1 teaspoon brown mustard
1 teaspoon corn starch
