Day 56

Taking the day off no weighing and no gym

1/2 cup chopped shallots
1/4 cup low sodium soy sauce
3 tablespoons lemon juice
3 tablespoons balsamic vinegar
1 tablespoon olive oil
2 teaspoons thyme
1 teaspoon dried oregano
4 garlic cloves, minced
1 (2 pound) boneless top steak, trimmed
cooking spray

Mix all ingredient put steak in it ( zip lock is the best) I'd marinated it for at lest 24 hours. I tried it at 8 hours and it wasn't enough for me.

heat broiler spray pan . broil about 6 inches away for about 4 to 5 minutes a side. let rest 5 minutes then cut on the diagonal

At this time 18 years ago I was in labor waiting for Courtney to make her debut. Sad thing is I am heavier now than I was at full term carrying her. I Remember thinking 172 was so HUGE. Now I'm dreaming of seeing that on my scales....

Day 54

216.2 DOWN! Aren't ounces fun?

I slept like the dead even though there were terrible storms all night. Waking up at 3:30AM yesterday was a great sleeping pill for last night. My head hit the pillow that is the last thing I remember. I woke up late too!

Yesterday's Total Body Work out class kicked my butt yesterday. But of all the body parts I thought would be sore it's my biceps that are. I guess we did a lot of reps. Probably my ass and legs would be more sore if I'd been able to do more of the resistance band training. I kind of wish that had been more at the beginning instead of the end when I'm pretty tired. I guess the more my stamina goes up the more I'll be able to do. Maybe if I practiced at home....nah.... LOL! I like doing it in class. I try very hard to do it in front of other people at home it is very easy to give up or do less. My upper body is in better shape than my lower. My abs need lots of work.

The London Broil was good. I forgot to take a picture. Not my favorite cut of meat. I think marinating over night probably is the thing to do. I'd cut it in half. Half Katie & I ate, and half I marinated over night. I'm thinking the more it marinates the more flavorful it will be. So I think we shall have it Saturday for lunch. I'm thinking next beef will be tenderloin (aside from ground beef). I know both Jim and I prefer it. Great source of vitamin B12 and iron and it is lean.

Day 53

217.2 BLAH!

I feel like shit. Really that's all I've done since 3:30 AM. I keep cramping up and running for the Loo. I'm to the wet wipe point only. Toilet paper feels like sandpaper. I don't know what the deal is. I don't think I'm going to make Total Body work out this morning.

Trying new recipe today! London Broil, so I'll be marinating all day....

I made myself go to the gym and do the Total body work out class. OUCH! I bet I won't be able to move tomorrow. Andrea is a demon! OMG! I truly need the pitch fork for letting myself get this far out of shape. Hopefully this will work my ass off literally!

Off to marinate... And make myself an appointment for a massage or facial I deserve one!

Day 52

217.2 I am ambivalent about this number. Yes it is less than yesterday, but more than the day before that by 4 ounces. I worked my ass off yesterday at the gym. That total body work out was killer. My ass and shoulders hurt. I lifted of top of that class plus did 20 minutes of cardio.BLACK BEAN, CORN, AND SHRIMP SALAD

Tried a new recipe. jim had my camera at work so i took a picture with my phone and as soon as I figure out how to get of the phone to the web. I'll put it and the recipe up .I GOT IT!!!! WOO HOO!

1 tablespoon chili powder
1/2 teaspoon garlic powder (you can use garlic salt but I'm lowering sodium)
1/2 teaspoon ground cumin
1 1/2 pounds shrimp 9 peeled deveined ( I used pre cooked so i just rewarmed them in the pan)
cooking spray
2 tablespoons fresh lime juice
1 1/2 cup corn
3/4 cup salsa
1/4 cup fresh cilantro ( left this out because I didn't have any)
1 can black bean (rinsed and drained)

Put first 3 ingredients and shrimp in bowl toss them to coat.
Coat pan with cooking spray.
Saute' till done
Add lime juice
remove from pan
add all the rest of the ingredients to heat

I actually never removed the shrimp just tossed everything together because I used precooked. I served this over brown rice.

it comes out to about 220 calories High in protein 43.3g, high in fiber 9.1g, high in iron 7.6mg

Day 51

218.4 :( I'm beyond upset. I haven't done anything to gain weight. I've stuck like glue to the 1800 calories a day or under. I worked out for 2 hours yesterday. I do believe it is water weight. I don't understand why I puff up like this I never did it before that I noticed. I think I'm going to go to weighing once a week. It is great weighing everyday when you are going down but these weird up swings are killing my mojo. I mean that to me is a HUGE jump from 216.8 to 218.4. It my be my cycle. Great PMS for two weeks aren't I lucky, NOT. The Evening Primrose hasn't seemed to have an effect. It is supposed to even out the water weight issue. Any way I'm miserable. Here I thought 215 was right within my reach, another mini goal.

I'm lifting weights this morning, and maybe doing a little cardio in the theater at the MAC.

I my quest to get enough iron and potassium in my diet i'm going to have to turn to box cereal. This morning it's Smart Start, it only has 25% of iron. I'm thinking Total is the only way to insure I get all the iron. WE don't eat much red meat. I've eaten spinach and dried fruit but I never get the full amount. My gummy multi-vitamin doesn't have iron! Going to have switch brands. It is really hard to get everything you need by diet alone.

Day 50

217.8 :( I have no idea what I did to gain a pound. I didn't over eat. Maybe too much sodium? I went to bed early. I didn't do a "gym" work out, but i walked the dogs about a mile, swept the down stairs, half of the up stairs, and the stairs. Sweeping the stairs is a workout in itself. Took Courtney shopping. All I can think of is sodium, too much of the pistachios I ate.

I'm finding it hard to get away from sodium. It is in EVERYTHING. Why do food manufactures feel the need to put so much salt in everything?

Oh well zumba and yoga today! hopefully tomorrow I'll be back down again....

I think I'm going to walk the neighborhood as my cardio today. It's too beautiful to spend the day indoors! I'll go lift at the MAC later.

I need to try some new recipes! I think I may treat myself to some new recipe books since I have that lovely gift card for Amazon.

Day 48

217.8Cranberry Pork loin

1 pork loin (1 pound or more if you are hungry)
16 oz can jellied cranberry sauce
1/2 cup splenda
1/2 to 1 cup cranberry juice ( I like more for more sauce)
1 tsp dry mustard
1/4 teaspoon ground cloves
2 tablespoons corn starch
2 Tablespoons cold water

get out your crock pot or slow cooker what ever.... Brown the pork... then throw everything in the crock pot and forget it till dinner time!

Take out the pork pour the sauce in a pan heat to boiling add a mixture of cornstarch and cold water to thicken...YUM!

Day 47

What I've been working on. Parchment paper still holding up "ruff" needs to finish drying. pretty pleased with the way it looks.

I feel puffy but the scales didn't show it. Or maybe they do but it is still a loss...

Predators won last night! Katie and I went out to eat and then to the game we had a blast. I need a cute Predators pic....

Zumba this morning! and then finishing a Snow White cake today :)

Day 46

218 still going down... by ounces. I've lost 6 pound since January 31, 2011. Not too bad! Next mini goal is 215. So three more pounds and I'm doing something nice for me. I think I need to schedule that group on facial I bought... I just might be able to fit into some of my old jeans much better. Like be able to breath when zipped... LOL!

I was slow moving and bad this morning. I didn't go to total body work out. I did do the lifting circuit last night. I got a ton of stuff to do around the house today, and start a cake. So best get to it. If I make the gym awesome if I don't it isn't too bad I haven't taken a day off since last Saturday and I worked all day so it didn't really count. Tonight I'll be walking around Nashville for the Predator game. I'll get at least a mile walk in and some good food.... Yeah! someone else cooking for me and Katie.

218.2 losing ounces... still losing

My shoulders are really sore today. Those push up during total body work out got me! I think i lose more weight when I weight train. Though it might just be the time of the month for me to lose without any water weight. I'm trying to psych myself up for Zumba this morning. I wish it wasn't at 8:05 prefer 9AM or 9:30 classes. I still haven't eaten breakfast. took my thyroid pill and not supposed to eat for at least half hour..... Just couldn't get out of bed sooner today...

Day 44

218.8 WOO HOO! UNDER 220!!!My Valentine flowers from Jim. They were delivered so late he was pissed off. Who cares when they come as long as they come right?
Sweet Potato fries! OMG! these are so GOOD!

All you do is peel the sweet potatoes. Julian them ( cut into strips or wedges), dip them in egg wash ( can just be the white but Dr Oz is now saying use the whole egg it's good for you). I used Italian bread crumbs in a zip lock to coat them. put them on a Pam sprayed baking sheet and then light spray them. put in 400 F degree oven for 25 to 30 minutes. Crispy on the out side! They are so delicious! just 220 calories. Great fiber and vitamin A
We had them with that Caribbean pork tenderloin and broccoli & cauliflower cheese casserole. Good Valentines food!

Day 43

220Chicken with creamy Dijon sauce

4 4oz chicken breasts or tenders
cooking spray
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon paprika
1/4 cup light mayonnaise
1 tablespoon lemon juice
1/2 teaspoon Dijon mustard
1 clove garlic or teaspoon mince bottled
1/4 teaspoon dry rosemary

Pre heat boiler
spray boiler pan
sprinkle chicken with salt, pepper & paprika mixture
spray chicken broil for about 4 minutes a side till done

mix mayonnaise, lemon juice, mustard, garlic and rosemary. Put on chicken when finished boiling serve.

FAST yummy!

I baked cupcakes for the last two day had no time for myself. i only ate 3! I had to test them...right? no frosting. I did however do Zumba Friday. I'm thinking today I'll do Zumba or do the weigh lifting circuit at that MAC.

The pool needs my attention badly... that should burn a few calories cleaning it up!

I think drinking more water is great for the skin. Mine feels soft way less dry. Could be the better diet too.

Day 38

220.4 again.... period started. In a day or two I'll be my normal un-puffed self.

Total body work work left my hips sore this morning and my shoulders a bit stiff. But all and all as out of shape as I am that's not bad. Plus class was only 45minutes due to a very late instructor. It was a substitute. I'm sure the full hour would have kicked my butt more.

Gotta get my zumba face on now! I'm feeling kind of lazy.... but I need to go I may not be able to go Friday and Saturday unless I get all the mini cup cake done. I have two events, Oakland Military ball and Wine tasting at St Rose.

Yup gotta move to lose...

Day 37

Still puff the magic dragon....

OK this water weight thing is really a downer. I just googled water weight/ PMS. This is pretty much what I found out. A lot of women share the same problem a few ounces to 5 pounds is pretty normal to retain right before your period.

The supposed fixes are
1. avoid caffeine ( PMS and no coffee I might KILL someone),
2. drink at least 8 8oz glasses of water ( I'm doing that),
3. eat high in potassium foods like bananas, apricots, etc ( I do that),
4. exercise at least 4 days a week ( try everyday....)
5.Avoid SODIUM. I've been trying vainly to do just that, EVERYTHING that I do not make myself seems to be over loaded with the stuff! Oh and STUPID me ate capers on smoked salmon pinwheels ( supposedly light good for you food). All those things are is a salt lick! So no processed foods at all or be PUFF THE MAGIC DRAGON....

I'm afraid I'll be a dragon for the next week I'll try not singe anything important....

221.8 :( just call me puff the magic dragon.....It is water weight. I didn't cheat. My fingers feel like little sausages and my ankles puffy. I just love PMS. Not weighing again till me period hits....
Smoke salmon pinwheels

Flour tortillas ( burrito size)
no fat cream cheese
smoke salmon

Spread cream cheese on tortilla. Sprinkle capers, place smoke salmon in slices. Roll up like an egg roll and slice in 1 inch slices

Day 35

220.8 :( watch the late night eating and sodium, oh an PMS!!!

one pound lean stew meat
whole wheat flour
McCormick Montreal grill spice mix
4 medium baking potatoes
1 small package baby carrots
1 1/2 medium onions or one large chopped
1 tablespoon olive oil
1 package onion soup mix
Worcestershire sauce
clove garlic
water 48 oz

Put olive oil in stew pot heat, add chopped onions & garlic.
put flour and grill spice in plastic bag put meat in shake to coat meat.
put in with onions & garlic brown
add water, soup mix, carrots, potatoes, and Worcestershire sauce.
bring to boil. cut back heat and simmer until vegetable are tender.
( I like to simmer for a few hours to thicken the broth).

Serve with wheat bread! Only 220 calories

Day 33

221.8 Another pound!so I'm a happy camper!

BUT I found out my whole what waffle recipe has about 709 calories per serving ( makes 6 waffles) I could cut out few by not using the oil...


1 1/2 cups whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon Cinnamon (optional)
3 tablespoons sugar or Splenda ( I use 2 Splenda, 1 sugar)
1 large egg
1 1/2 cups skim milk
2/3 cup to 1 cup apple sauce ( i had the lunch pack type cups, i used 2)
1 tablespoon olive oil
cooking spray

Heat waffle maker. Mix everything together. I mix all the liquid stuff first then everything else except the flour, then the flour after everything is well mixed. spray waffle maker grill. pour about 1/2 cup mixture into waffle maker shut lid cook about 3 minutes.

They are so good! worth the calories! they also have a pretty good grade as a nutrition source B- according to Calorie Count.

Day 32

222.8 I still look awful. But my pants are fitting better

Well back down to 222.8. I was hoping for 220 from January 3rd to February 3rd. There still maybe water weight that is slow my progress my ankles are puffy and so are my fingers. I'll take the downward trend happily.

Total body work out class this morning. I know it is going to kick my butt!

Mock fried chicken was for dinner last night. The recipe is right on the French's Onions can. Very light way to enjoy some "fried " chicken.

pre heat oven 400
crunch up some French's onions in a large baggy with table spoon of whole wheat flour
make an egg wash by beating one egg
dip boneless skinless chicken breasts in egg wash
put in onion/flour mixture shake
spray cookie sheet with Pam
put chicken in sheet spray the chicken tops
put in oven 20 minutes

Best mock fried chicken EVER!

Day 31

Time is almost up one month is tomorrow. This is the beautiful and cool new watch JIm bought me for my birthday.
So the ground hog did NOT see his shadow. So that might be a hopeful sign that I'll be able to use the walking trails with out freezing my parts off...

So I found out I'm NOT eating enough food. Although I feel like I'm eating all the time! If you don't eat enough food you kick your body into starvation mode and kick down your metabolism. So I've decided to try that 5 meals a day thing. It is really just two snacks instead of one. Really getting all the nutrients that you need is difficult. Reading all the labels is mind boggling! I'm using this to track what I eat Putting everything on it is challenge.You have to remember the pat of light butter, and handful of almonds. It breaks down your day. Tells you how you are doing and what you need more of in your diet. I'm very low on potassium and fats. Guess bananas and potatoes are in my future and maybe more olive oil?

Off to Zumba! yesterday I just did the treadmill at home and a some abs work.

Day 30

So SUPER FRUSTRATED TODAY! 224.2 Been logging my calorie in take. I did a hour Zumba class and 40 minutes on the arc machine. I'm sure part is water weight, part my thyroid isn't working properly, and part Murphy's Law ( that son of bitch!). Oh well, I have to just keep doing what I'm doing regardless of results. They may just sneak up on me. I won't weigh again till the 3rd of February since I started on January 3rd. That is picture day too. Reminds me I need to do my roots...
So I was Jonesing for some cookies the other night and thought what can I make that is semi healthy. I came up with this

Whole Wheat raisin dark chocolate chip oatmeal cookies

1 cup raisins
1/2 cup shortening ( you could use 1 cup apple sauce (100 calories) and 1 tablespoon shortening, 120 calories)
1/2 cup sugar
1/2 cup Splenda ( you could use all Splenda, but I find the sugar caramelizes much better)
2 eggs (204 calories) ( you could use 4 whites, 64 calories)
1/4 cup skim milk
1 2/3 cups whole oats
1 1/2 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
mini dark chocolate chips

Preheat oven to 350 F. Cream shortening and sugar* together add beaten eggs and milk mix. Add soda, salt, cinnamon, chocolate chips and raisins mix. add flour and oats mix thoroughly. Drop on parchment covered pans. bake for 12 minutes.
makes about 3 dozen medium size cookies.

By substituting 1/2 cup Splenda for sugar you save 385 calories, If you use all Splenda 770! Leave out the chocolate chips, BUT WHY? Gotta live. plus dark chocolate has some benefits in moderation ( see web site ). The whole wheat bumps up the fiber and protein. Again you can use apple sauce in place of the shortening getting rid of 906 calories of FAT (I still use 1 tablespoon of shortening 120 calories,It's a texture thing). So no saturated fats or Trans Fats or very little. Whites for whole eggs knocks a bunch off too! So this is as close to a "healthy" cookie as possible.
