Day 19

Last night's dinner was DELICIOUS.


2 4oz boneless chicken breasts pounded to 1/4 inch thickness
1/4 teaspoon salt
2 teaspoons olive oil
1/4 cup low sodium chicken broth
2 tablespoons lemon juice
1 tablespoon capers in balsamic vinegar
1/4 fresh ground pepper
2 Tablespoons parsley chopped

Heat oil add chicken cooking about 3 to 4 minutes a side till golden brown.
remove keep warm
add broth and lemon juice salt and pepper to pan stirring getting the less bits reduce
add capers stir.

plate chicken ( I used penne pasta with pesto and spinach) pour reduced sauce over sprinkle with parsley.

I was about licking the plate it was so good!

Katie and I did the gym thing...Aren't we good?
