I made Bread!





This recipe uses farmer's cheese, a semi-soft cheese with a mild flavor that can be tasted in the bread. The braided loaves feature a chewy crust and richly soft center. ( you can use any cheese though)
Yield: 2 braided loaves

Prep Time: 2 hours

Cook Time: 40 minutes

Total Time: 2 hours, 40 minutes

Ingredients:

  • 1 cup milk
  • 1 Tbsp butter
  • 1 cup warm water (100 degrees F)
  • 2 packages active dry yeast (1/2 ounce)
  • 2 Tbsp sugar
  • 2 tsp salt
  • 1 cup farmer’s cheese, shredded
  • 5 cups bread flour, approximately

Preparation:

  1. In small saucepan, warm milk and butter until butter is melted. Set aside until warm (100 degrees F). In small bowl add water. Stir in yeast until dissolved. In large bowl, add warm milk and butter. Add yeast water. Stir. Stir in sugar, salt, and 2 cups of flour. When batter is smooth, mix in shredded farmer’s cheese. Continue to mix in flour until a stiff dough is formed. Turn dough out onto floured board and begin to knead in the remaining flour until the dough is firm and smooth, not sticky.
  2. Put dough in greased bowl. Turn over so that dough top is also greased. Cover and let rise in warm, draft-free place for about 1 hour or until double in size. Punch down dough and knead for about 1 minute. Divide dough in half and set one half back in bowl.
  3. To make a braided loaf, divide dough into 3 equal pieces. Work each piece with your hands to form a long rope, about 15 inches in length. Pinch ends of the 3 dough ropes together and tightly braid the dough. Pinch ends together again. Repeat for second loaf.
  4. Preheat oven 375 degrees F. Grease and sprinkle yellow cornmeal on two baking sheets. Place each loaf on a baking sheet, cover and let rise in warm, draft-free place for about 30 minutes or until double in size. Brush egg white onto each loaf. Sprinkle with poppy seeds. Bake at 375 degrees F for about 40 minutes or when loaf sounds hollow when you tap on the bread top. Remove from heat and let cool on rack.

PROGRESS!

I got a large drawer cleaned out upstairs in the TV stand.  Why we saved half of the stuff is beyond me.
Clearing the clutter out feels good.  Been slowly picking away at it.

RANT!

This is what I believe:

1. Pursuit of happiness in for everyone.  So if a man wants to marry another man  or a woman wants to marry another woman they should be allowed  to do so.

2. The constitution says pursuit of happiness it does NOT guarantee it. Giving people money FOREVER  on welfare would have disgusted our founding fathers.  Unless you are completely disabled you should work somehow for the money you receive.

3. I believe in gun control.  I think more extensive back ground checks should be done.  No one "needs" an assault rifle to hunt.

4. I believe abortions should be legal in these cases, rape, incest, and, health concerns for mother.  NOT as a form of birth control.  BUT women should decide NOT men.  Our bodies our health our concern.

5. I am tired of stay at home moms being made fun of, or less of, or people calling us "corporate wives".   We actually RAISE our own children not day cares.  Even when I tried to work  outside the home the hours for child care made it impossible with my husband's travel schedule.  I did run my own business from home...

6. Manners have been forgotten.  Parents do their children no good service allowing them interrupt adult conversations because they want the spot light.

7.  Any one who is cruel to animals should be horse whipped.  Seriously.

8. Drivers tests should be much harder.  You SHOULD get a ticket if you don't use your turning signals.  People over 65 should  have eye sight test EVERY year.

9. It should be harder for people to get married.  There should be classes/counseling on finance, parenting, and how to argue/ disagree effectively without hurting the other person.

10. Should be harder  to get a divorce.  Counseling for at least two years except in abuse cases.

11. There should be term limits for senators and congress.  Extensive back ground checks should be done on them.  NO CAREER POLITICIANS!

12. Pedophiles should be shot.

13. Murderers and rapists should serve their whole sentence in prison period.

14.  Everyone should have the SAME representation in the courts.  It should NOT matter how much money you have.

15.  Most lawyers SUCK.

16. Law suits should have a two year limit.  After that they are void.

17.  Over regulation kills businesses.

18. Being PC sucks.  Raising a nation of wimps.

19. They should teach this in school manditory:  how to cook, balance check book, make a budget, basic sewing, basic auto repair, how to do laundry, and how to clean and WHY.

20. BE KIND.

If it not one thing, it is another...

I'd just like to have a month where nothing goes wrong. No car problems, no kid problems, no house problems, etc.  IS THAT TOO MUCH TO ASK?!  Barring that can I PLEASE  win the BIG prize in the Power Ball lottery?

Sorry! This is going to be self-indulgent whine-fest.  It seems as soon as I get one thing fixed something else breaks.  I feel like I am running as fast as I can in muck-boots and deep mud.  If I don't keep moving I'll be sucked under the mud and drowned.

is it half empty or half full? 

I guess I need to focus on what I should be thankful for, not so negative. So here goes nothing! Half a glass of wine is better than none,  right?   LOL!

Sausage Rolls

These are SO EASY!


This is what you need:

Mix the cooked crumbed sausage with softened cream cheese
Unroll cresent rolls
Then spread it with the cream cheese sausage mixture.

then roll and cut
Bake at 375 for 15 minutes

THESE ROCK!   You can modify them a bunch of different ways!  Glad I found this on Pinterest!

Hybrid Cookie recipe

I am calling them oatmeal zucchini raisin breakfast cookies.


1 cup raisins
1/2 cup shortening
1/2 cup sugar
1/2 cup Splenda ( or you can do 1 cup sugar or all Splenda browns better with sugar)
2 eggs
1/2 cup 1% milk
3 cups oatmeal
1 cup whole wheat flour
1/2 cup white flour ( again you can use any flour you want)
1 1/4 teaspoon soda
1/2 teaspoon salt
1 generous teaspoon cinnamon
1 cup zucchini, grated
1/2 cup mini semi sweet chocolate chips



I just threw everything in a big bowl broke out the handmixer and let her rip till well mixed.  Put them in a 375 degree F oven for 12 minutes.  I made generous sized cookies more like small biscuits.  You can make them smaller probabaly cut cooking time down 8 to 12.

I always use parchment paper now when I do any cookies.  No brown bottoms ever unless you REALLY over bake them.  I use the same sheet several times too for same cookies. Save a few pennies....

Anyway lots of fiber!  worst thing in this recipe is the shortening I think you could use a cup of apple sauce and tablespoon of vegetable oil instead.  I just like the texture of that the shortening gives them.

Ups and Downs

221.6   YIPPEE.  I wish the weight was coming off faster, BUT from 228.8 it isn't bad especially with a trip home for a wedding. What makes me sick is last year at this time I was under 200.....  No use beating myself up over it! BUT If I'd kepted on track I'd probably at 150.....

Well, so much for NOT beating myself up.... 7.2 pounds down in 19 days.   I need to step it up!

ON THE GOOD SIDE I LOST WEIGHT  222.4 this morning!  And the bad side Jim and I had a HUGE fight.  More like he ranted at me, and I listened.  I must admit he has a point.  BUT two of the things he ranted at me about he helped create too.  Now I have to fix it.  I should have fixed it long ago.  I've taken steps.  I got a job.   i need to drum up more Cake business.  WISH ME LUCK!

SHOPPING

Katie and I went shopping
 I got new reading glasses.  I broke my prescription ones.  These seem to be close to my prescription if not spot on!  I want to find sun glasses like this!  I had a pair and they are missing in action :(
Am I a hat person?  well in the pool reading I am the glare kills my eyes any more.  I think a big one too!  Yeah, I can rock hats why not?

Finally found Katie-boo a swim suit!!!  YIPPEE!  She got a cover up, shorts, and  couple of shirts too.


Jim, Katie and I  saw the Men in Black 3 film.  GOOD!

Almost back to where I was..... need to work a bit harder....BLAH!

Zucchini bites!

 The smell of these cooking is HEAVEN!
 ZUCCHINI
 ONION
 MINI MUFFIN PAN FILLED
DONE!



1 cups zucchini, grated
1 egg
1/4 yellow onion, diced
1/4 cup cheese (cheddar or Parmesan work the best) ( I USED BOTH)
1/4 cup bread crumbs - I used Italian style
Salt and Pepper

1. Preheat oven to 400F. Spray a mini-muffin tin with non-stick spray, set aside.
2. Grate the zucchini and then place in a dish towel to squeeze out the excess water- like when using frozen spinach; if you skip this part, the middle of the zucchini tots will be really soggy while the outside gets crispy and no one wants that.
3. In a bowl combine, the egg, onion, cheese, bread crumbs, zucchini, salt and pepper.
4. Using a spoon or a cookie scoop, fill the muffin cups to the top. Bake for 15-18 minutes, or until the top is browned and set.

Mexican Food OH MY!

So I took my daughter and one of her friends to dinner last night.  Love Mexican food, BUT the tortilla chips are DANGEROUS!  Before we knew it the 3 of us had scarfed down a whole basket with queso and salsa, another was put before us after that... When our dinners arrived we all took about three or four bites.  Guess what I'm having for lunch today?! MINUS THE DREADED CHIPS!  not very sensible eating friendly  :(

Blueberry Panckake Morning

Any day that starts off with blueberry pancakes can't be all bad.  I should have them more often it might improve my life.

I tried out the Hungry Jack Wheat Blends pancake mix supposed to be whole grain.  They taste vaguely of my from scratch whole wheat.  I think I like mine better  might be the apple sauce I use. BUT these are FAST, just add water and the blueberries.   Best thing is I ENJOYED THEM!  You have to appreciate the small things!

So the weight I gained going to Ohio is melting off.  1.4  lbs. more to get back to where I was. If I don't blow it today I should be there by  tomorrow or Saturday.  I truly just want to be able to be less self conscious.  To be able to move and have have doing any activity without being tired.  If I get to 200 by trip time I'll be so happy.  Not killing myself to do it though.....
