We all had a very nice weekend. Courtney & company went to the Tennessee State Fair yesterday. I can't wait to see the pictures they took.
Of course Jim and I went to the Titans game. Titans WON! They are Number 1 in AFC south by virtue of them being the only one to win. WOO HOO! Vince Young hurt his knee. Not BIG news like Tom Brady, and not as serious hopefully.
Katie had her friends over night Friday and of course we went shopping. She was the only one to just hang out and relax yesterday.
I made the curry chicken with peanut sauce, YUM that is so good! The peanut sauce is so EASY!
PEANUT SAUCE
coconut milk 14 oz can
2 to 3 Tablespoons peanuts butter
juice of one lime
2 Tablespoons brown sugar
Heat to simmer stir for 5 minutes. Can be eaten hot or cold
the curry paste I got from the international market. just mixed with olive oil and tossed chicken chunks and let marinade for about an hour. Put on skewers and grill 3minutes a side. i'm drooling just writing this....it just that good!
