All you do is peel the sweet potatoes. Julian them ( cut into strips or wedges), dip them in egg wash ( can just be the white but Dr Oz is now saying use the whole egg it's good for you). I used Italian bread crumbs in a zip lock to coat them. put them on a Pam sprayed baking sheet and then light spray them. put in 400 F degree oven for 25 to 30 minutes. Crispy on the out side! They are so delicious! just 220 calories. Great fiber and vitamin A
