Here's the new recipe I'm trying out.
Mediterranean Stew
1 med butternut squash peeled & cut into cubes
2 cup eggplant cut into cubes
2 cups zucchini
1 can chick-peas rinsed & drained
1 can tomato sauce 8 oz
1 cup chopped onion
1 medium carrot
1/2 c vegetable broth
1/3 cup raisins
1 clove minced garlic
1/2 teaspoon cumin
1/2 teaspoon turmeric
1/2 teaspoon ground red pepper
1/4 teaspoon cinnamon
1/2 teaspoon paprika
cooked couscous
Just put all of these ingredients EXCEPT the couscous in the cockpot on low for 8 to 10 hours.
I don't know how it tastes yet, BUT it smells divine!
